Butterfly Pea Tea Syrup cocktail

Ingredients

  • 1 cup Water
  • 1 cup Sugar
  • 1 to 2 tbsp Dried butterfly pea flowers — Or butterfly pea tea
  • 1 pinch Fine salt — Optional, use a tiny pinch to round out the sweetness

Method

  1. Bring the water just to a simmer.
  2. Add the butterfly pea flowers or tea and steep for 5 to 10 minutes, until the liquid is deeply blue.
  3. Strain out the flowers or tea.
  4. While the tea is still warm, stir in the sugar until fully dissolved.
  5. Add a tiny pinch of salt, if using.
  6. Cool completely, then bottle and refrigerate.
