Ingredients
- 1 cup Water
- 1 cup Sugar
- 1 to 2 tbsp Dried butterfly pea flowers — Or butterfly pea tea
- 1 pinch Fine salt — Optional, use a tiny pinch to round out the sweetness
Method
- Bring the water just to a simmer.
- Add the butterfly pea flowers or tea and steep for 5 to 10 minutes, until the liquid is deeply blue.
- Strain out the flowers or tea.
- While the tea is still warm, stir in the sugar until fully dissolved.
- Add a tiny pinch of salt, if using.
- Cool completely, then bottle and refrigerate.
